Mini Carrot and Nutmeg Egg Bites

Ingredients
- 2 Tbspns of the Spice Trading Company's Dreamy Carrot & Nutmeg Spice mix
- 1 onion
- 1 medium zucchini
- 1 small tin of canned corn kernels
- 30 g of olive oil
- 6 eggs
- 4 tbspns plain flour
- 1/4 teaspn Salt Skip baking powder
- 200g grated Salt Skip Cheese
- Finely chop or process onion and zucchini and combine with olive oil
- Add in eggs, flour, baking powder, Dreamy Carrot & Nutmeg Spice Mix, grated cheese.and drained sweet corn
- Mix thoroughly
- Pour mixture into a greased muffin tin
- Cook in a preheated oven at 220° celsius (or 200° celsius fan forced) for 15 mins or until nicely golden on top.
- Leave to cool slightly and then serve with a salad or soup, or just enjoy them on their own.
